Farm

All ingredients on our menu at The Bricks are grown on over 20 acres at our privately-owned, cooperative farm, Fox Hollow Farm, located in Metamora, Michigan. We grow our organic grains and produce and fresh herbs thrive in our greenhouses. We raise live chickens, ducks and have active honey bee hives on the property.

As our farm develops in its first year, we are working with supplemental Michigan and Ohio-based farms to support our fresh ingredient needs and high standards. All ingredients used by The Bricks come from within 100 miles of our restaurant.

Farm Fresh Ingredients

Our farm uses organic and sustainable practices to support the growth of fresh produce, herbs, and eggs from chickens and ducks.

Stone-Milled Grains

Our organically grown grains are milled at the restaurant and used for our pizza dough and house-made, extruded pasta.

Wood-Fired Oven

All pizzas at The Bricks are made using a natural fermentation process and baked only in our wood-fired oven.

The Bricks menu comes to life, first at Fox Hollow Farm. There, our ingredients are nurtured from the start using organic and sustainable practices. We grow our grain, mill it into flour, rely on natural fermentation, and extrude our pasta fresh and in-house, taking great care to create a memorable experience.
