Long before they reach your plate, the ingredients behind our pastas get their start at Fox Hollow Farm. Fox Hollow Farm is our privately-owned co-op farm in Metamora, Michigan. The farm’s 20 acres are used to grow a variety of produce, grains, and herbs.
In addition, the farm keeps bees for honey, as well as chickens and ducks for eggs. Everything on the farm is grown with organic, sustainable farming practices.
Any ingredients we don’t get from Fox Hollow Farm are sourced from other suppliers located within 100 miles from our restaurant.
These locally-sourced ingredients go directly toward making each one of our menu items. To make our fresh pastas, we take grains from our farm and mill them in our restaurant with our own Osttiroler grain mill.
This mill creates the fresh flour we use for our pizza and pasta dough. The result is quality and freshness you can really taste.

Cacio e Pepe
This classic fresh pasta dish is delicious in its simplicity. It starts with our house-made bucatini pasta, made from our dough using fresh flour and natural fermentation. The sauce is made with Pecorino cheese for a rich flavor and a generous amount of black pepper for a satisfying kick.
Pomodoro
Our farm-fresh ingredients really have a chance to stand out in this timeless dish. We pair our house-made spaghetti with a vibrant, house-made red sauce. Simple and flavorful, it holds up on its own. However, you can make it a heartier meal by adding our meatballs on top.
Gemelli
Our gemelli pasta is a rich, creamy, and flavorful pasta with a touch of spice. This dish features our house-made gemelli pasta tossed with savory Italian sausage, Calabrian peppers, tomato confit, garlic, cream, and a hint of truffle oil.
Ragu
The ultimate Italian comfort food. We use our house-made bucatini for this dish, coating it in a rich, slow-simmered red meat sauce and finishing it with Parmesan. It can be enjoyed on its own, or you can choose to add meatballs.
