Our pasta menu showcases a collection of four fresh pastas. Each dish celebrates authentic Italian flavor, made with care from dough created that we make using flour milled in-house. Our pastas include:
Cacio e Pepe
A classic Roman dish. The name translates to “cheese and pepper,” and it is prepared by emulsifying grated Pecorino Romano cheese and a generous amount of cracked black pepper with hot, starchy pasta water.
The result is a smooth, creamy sauce without any added fat. We use our house-made bucatini made from dough using our hand-milled flour.
Pomodoro
A pasta dish with simple, light Italian tomato sauce. The name translates to “golden apple,” which was an old name for the tomato. The sauce is typically made by simmering fresh tomatoes, olive oil, and garlic, and is often finished with fresh basil.
The goal is to capture the pure, vibrant flavor of the tomato itself. We use our house-made spaghetti paired with our house-made red sauce. Enjoy on its own, or add meatballs on top.
Gemelli
This short, twisted pasta shape, whose name means “twins,” is known for its ability to catch and hold sauces. It is excellent in a variety of dishes. We make our gemelli in-house, and mix it with Italian sausage, calabrian peppers, tomato confit, garlic, truffle oil, and cream.
The result is a rich, creamy sauce paired with the savoriness of the sausage and spice of the peppers.
Ragu
Ragu is a classic Italian meat-based sauce that is simmered slowly over a long period. The dish is typically made with ground or finely chopped meat and vegetables. The extended cooking time tenderizes the meat and develops a deep, rich flavor.
Our take features our house-made bucatini with a rich, red meat sauce and Parmesan. It can be enjoyed as-is, or paired with meatballs.

Much of what goes into our food gets its start at Fox Hollow Farm, our privately-owned farm in Metamora, Michigan. This co-op farm is 20 acres, and is used to grow produce, grains, and herbs, as well as honey, eggs, and more.
Everything is grown with organic, sustainable farming practices, reflecting our commitment to locally-grown, sustainable ingredients and Michigan farms.
Any ingredients we don’t get from our farm are sourced from other local suppliers within a 100-mile radius, ensuring peak freshness in each one of our plates.

Creating our Pasta Dough
The commitment to quality doesn’t stop with how we get our ingredients. Our commitment to freshness and cooking with care extends to how we process them. To make our fresh pastas, we mill the grains from our farm in-house, using an Osttiroler grain mill.
This mill creates the fresh flour we use for our pizza and pasta, ensuring ultimate quality, freshness, and taste.
