The Bricks is more than a place to eat. It is a working expression of farm-to-table cooking, told through pizza, fresh pastas, and seasonal salads. The idea began with a simple belief. How food comes into being matters as much as the food itself. Every step has a story worth sharing, and those stories connect the farm, the kitchen, and the guests who gather at our tables in Grosse Pointe Park.
Our team comes from diverse backgrounds, yet our paths meet at a 750° wood-fired oven. Here we practice time-honored techniques that produce dough with real character, sauces with depth, and toppings that highlight the integrity of each ingredient. Guests are invited to slow down, share a meal, and enjoy the company of friends old and new.
Fox Hollow Farm
Many ingredients begin at Fox Hollow Farm, our privately owned cooperative farm in Metamora, Michigan. The property spans more than 20 acres and follows organic and sustainable practices. We grow grains and produce, tend herbs in greenhouses, and care for chickens and ducks that supply eggs. Active honey bee hives support pollination and biodiversity.
Our sourcing remains local as the farm expands. Partner farms in Michigan and Ohio help meet peak seasonal needs while we maintain strict quality standards. All ingredients are sourced within 100 miles of the restaurant.

Long, cold fermentation carefully builds unmistakable, deep and complex flavor and creates a light, crisp crust for an incredible pizza.
Stone-Milled Grains
An Osttiroler grain mill transforms our organically grown ancient grains into fresh flour used for pizza dough and house-made pasta.
Wood-Fired Oven
High, even oven heat from a traditional wood-fired oven produces a tender interior and a beautifully blistered exterior.
