How Do We Create Our Grosse Pointe Pizza?

This 20-acre farm grows a variety of grains, produce, herbs, honey, and even farm-fresh eggs. Ingredients that don’t come from the farm are sourced from local suppliers within 100 miles of our restaurant.
  • Flour: We mill the flour for our pizza and pasta dough in-house using our very own Osttiroler grain mill. This traditional milling process creates the fresh flour that gives our dough a unique taste and texture.
  • Dough: The flavor of our crust is the result of a long, natural fermentation process. Our dough undergoes cold fermentation, which creates a deep and complex flavor. This natural technique results in a crust that is airy and light on the inside with a satisfyingly crisp finish on the outside.
  • Cooking Process: Cooking in our wood-fired oven is the last step in the pizza cooking process. Unlike conventional ovens, wood-fired ovens create an intense, even heat. This heat seals in the flavors and gives the crust an authentic char.

Our menu features four pastas: Cacio e pepe, pomodoro, gemelli, and ragu. Each pasta is house-made, and features house-made sauce and locally-sourced ingredients. Meatballs, prosciutto, or shrimp can be added to any of these selections.

Balanced, flavorful, and light, our salads are tasty and refreshing, and the perfect complement to our pizzas and pastas. Each one of our salads can be customized to your preferences by adding anchovies, shrimp, or prosciutto.
