These ingredients are used in all of our dishes, including our pasta and pizza dough. Our dough is made with organic ancient grains from the farm. We mill it by hand in our restaurant, using our very own Osttiroler grain mill.
Milling our grains in house creates a flour that is uniquely fresh and flavorful. Our dough then goes through a natural fermentation process that adds natural flavor. When the dough is baked in our wood-fired ovens, the result is a crust that is flavorful–crispy on the outside, and light and fluffy on the inside.
